Incredibly Easy Stuffed Chicken Breasts

Yes, it's true. Chickens are easy. I still feel a moment of guilt, though, during preparation, for consuming such a commercially abused animal. No such difficulties in eating it, though.

These breasts are stuffed with pesto, butter and cheese. If you can find a vendor of fresh pesto, all the better. We have one at the local farmer's market ($6 for a little one-cup container, but it's good stuff). I chose one that was a mix with cranberries. Also comes with other flavours, like oregano, artichoke, roasted red pepper, and lemon grass.

5 boneless chicken breasts
2 pads butter
1/2 cup pesto
1 cup cheese
1 cup or more of pasta sauce

Melt 2 pads of butter in a pot on medium heat, and stir in pesto. Let cool, and add shredded cheese (I used cheddar, very nice). Slice chicken breasts part-way through and stuff each with a portion of the mix, then press them closed. Coat pan bottom with pasta sauce. Place chicken breasts in and coat with another layer of pasta sauce. Into the oven at 350 for 30 minutes.

I'm sure a more experienced cook would put a layer of parmesan a'top, or something. Myself, I was too hungry.
