Coconut Candied Salmon

Candied salmon is usually smoked, but that's far too much work. This candied salmon is made with a large fresh fillet of salmon, maple syrup and about one cup of chopped coconut.

Brush the salmon with maple syrup and put it in the fridge for about an hour to marinate. Cut it into 1 inch strips and apply another coat of syrup, and then coat with coconut and place on an oiled cookie sheet. Dribble remaining syrup over the strips. Cook at 400° for 12-14 minutes until coconut is lightly browned.
